More spinach, PLEASE!
How do you get your kids to fight over eating spinach? Spanakopitas is how!
I made spanakopitas yesterday, and at evening time my children were fighting over them! Mmmm-Mmmm! I just ate one as my breakfast. It has been a couple of years since the last time I made them. When I was married, the ex would buy 40-60lbs of shrimp from the local shrimpers and thus with overabundance of shrimp in my freezer, I used to chop up cooked shrimp and add them to the spanakopitas. Talk about a party pleaser!
The children’s school theme for the month is “traveling around the world”, and each week they are learning about a different country. Just coincidentally they will be traveling to Greece next week, so I snapped photos while I was preparing the spanakopitas today, thinking that perhaps Jackson and I could make some next week to take into class, along with a storyboard.
Jackson is excited about the idea. He got upset last night when his sisters started eating them, he was confused and thought that yesterday’s batch was intended for school. I assured him that we would make more next week to take to school.
So, what does any person with a blog do? post the pics.

1/2 onion chopped

saute the onion

remove pan from heat, toss in spinach

wilt spinach, add parsley... I tossed some salt in to help the spinach wilt faster.

feta, kasseri, egg, salt and pepper

phyllo dough unrolled, then cover with saran wrap and damp towel

melt MORE buttah'

cut phyllo into strips lengthwise, brush melted butter on smooth surface and begin layering, brushing each layer with butter... I used approx 4-5 layers, but I think I could have gotten away with 3-4...

spoon filling onto corner/end of phyllo

fold corner up into triangle shape, then continue folding down the length of dough. Brush loose end with butter to "glue" it together, place on baking stone...

bake 6-7 mins, flip and bake 6-7 mins more/until golden... then YUM!!!!
